In the summer of 2008, after 8 years in the music industry, Joe Ramaikas launched The Cupcake Corral. The business was initially created to fill the void of delicious, home-style cupcakes in the Maplewood/South Orange area. He was unsatisfied with what was available locally and so a decision was made to try and make a better product. Flipping through family cookbooks filled with generations worth of recipes to choose from - Joe tried and adapted many of them to his purposes. Word spread and soon Joe was catering parties and events for his neighbors and even for thhe stars! Cupcakes were always intended to be a lead-in to bigger and better things, however. There were so many other delicious family recipes to offer.
The initial idea of what The Cupcake Corral has become started way back in 2006 when Joe and his family first moved to the area. He and his wife, Felice, being appreciators of great coffee, and again not being completely satisfied with what was available, they both fantasized about one day opening a coffee house. Delicious baked goods and perfectly brewed coffee go hand in hand, so the two ideas were destined to be hitched.
January 2010 the ideal space become available and they jumped at the opportunity. The Cupcake Corral café and bakery opened its doors to the public in late summer 2010. The rest, as they say, is history
Joe is a self-taught baker. He co-owns The Cupcake Corral with his wife Felice. They live in Maplewood, NJ with their awesome son and all-around cool guy, Hank, their cockatiel, Nibbles, and their guppy, Sube-Koon.
